summer rolled into winter with a great nutty flavour without the
nuts.
ingredients

grams unsalted butter, cubed
1 cup dark brown sugar
1 tbspn pure maple syrup
2 large eggs
1 cup organic wholemeal spelt flour
1 cup plain white flour
2 tspns baking powder
pinch salt
1 cup dried mango, chopped
1 cup dark choc-chips
1 cup toasted soy flakes
method
Preheat oven to 175 degrees c.
Combine butter, sugar and maple syrup in a mixing bowl until creamy.
Reduce speed to slow and add eggs one at a time. Sift in flours, baking powder and salt. blend until dough forms.
Fold in dried mango, choc-chips and soy flakes.
Prepare a baking tray, line with baking paper or lightly grease with spray cooking oil.
Roll spoonfuls of the mixture using your hands, place on tray and press down to form cookies.
Bake for 15 minutes or until golden.
